बैचलर असताना आम्ही सर्व रूममेट्स पुण्याहून कोल्हापूरला फिरायला गेलो. रात्री पांढऱ्या-तांबड्या रस्यावर चांगलाच ताव मारला आणी मस्त गप्पा गोंधळ करत कधी झोपलो ते आठवत नाही. सकाळी उठल्यावर चहापान वगैरे उरकून झाल्यावर नाश्ता काय करायचा याविषयी एकमत होईना. आम्हा सगळ्या मंडळीना कोल्हापुरी मिसळबद्दल प्रचंड उत्सुकता होतीच त्यामुळे ती कुठे चांगली मिळते ते शोधून काढले. महाराष्ट्रात कोल्हापुरी म्हणजे तिखट, लाल भडक मिसळ, अशी समजूत आहे. साहजिकच आम्हीही तेच समजून "फडतरे मिसळ" या कोल्हापुरातील मिसळकरता प्रसिद्ध अशा ठिकाणी रांगेत उभे राहून मिसळ समोर येण्याची वाट पाहत बसलो. जेव्हा मिसळ आली तेव्हा आम्ही आश्चर्यचकित झालो कारण ती तांबडी तरीदार तर मुळीच नव्हती आणी तिखटहि नव्हती. माझ्या इतर मित्रांना ती अजिबात आवडली नाही. मला बेडेकरांची मिसळ खाण्याची "सवय" असल्याने मी ती खाल्ली. बाहेर आल्यावर आम्ही एका कोल्हापुरी माणसास याबद्दल विचारले असता तो म्हणाला कोल्हापुरी म्हणजे तिखट हा एक गैरसमज आहे कोल्हापुरी मसाल्याची एक वेगळी अशी चव आहे. ते ऐकून आम्ही मनोमन म्हणालो आपली नाशिकची मिसळच लय भारी बुवा!

हिरवी चटणी- हिरवी मिरची लसूण ठेचा
हिरवी मिरची लसूण ठेचा/चटणी
साहित्य: २-4 लवंगी मिरच्या (कमी तिखट सुद्धा वापरू शकता), ८-१० ताज्या लसणाच्या पाकळ्या. मीठ व लिंबू.
कृती: प्रथम मिरच्या धुवून, लसूण सोलून, व १ लिंबाचा रस काढून ठेवावा.
हि चटणी किंवा ठेचा माझ्या मते पाट्यावर वाटला तरच सुरेख होतो. तुमच्याकडे पाटा वरवंटा नसेल तर तुम्ही एखादा मोठा व एक लहान दगडही वापरू शकता (परंतु तो आधी स्वच्छ धुवून घ्या.) मिक्सर वापरू नका अन्यथा अपेक्षित चव येणार नाही.
मिरची व लसूण एकत्र साधारण ३ मिनिटे वाटून घेऊन त्यात लिंबाचा रस व मीठ चवीनुसार घालावे. आणी अप्रतिम ठेच्याचा बाजरीच्या अथवा ज्वारीच्या भाकरीबरोबर आस्वाद घ्यावा. झुणका व कांदा सोबत असल्यास दुग्धशर्करा योग समजून पाककर्त्यास (किंवा कर्तिस) मनोमन धन्यवाद द्यावा. .

Kande\Batate Pohe
Ingredients
Pohe (Beaten Rice) - 250 gms or one big bowl
Onion - 1 chopped
Potato - 1 chopepd
Chopped Green Chillies - 3
Peanuts - 1 table spoon
Curry leaves - 3-4
Chopped Coriander leaves- 2 Table spoon
Sugar - 1 tea spoon
Lemon - 1
Oil - 4 table spoon
Mustard seeds (Rai) - 1 tea spoon
Turmeric powder - 1 tea spoon
Salt to taste
Recipe:
Step 1) Wash the pohe and remove water immediately and keep aside.
Step 2) Heat oil in fry pan/kadai. Add musturd seeds and when they start crackling add turmeric powder, chopped chillies, cury leaves, peanuts. Saute it for 2-3 minutes.
Step 3) Then add chopped onion saute it till it becomes half cooked. Then add potatoes and cover it with lid.
Step 4) After 2-3 mins add pohe, salt sugar and mix it well on medium flame. Squize the lemon and garnish with coriender leaves.
Optional: You can also use green peas,tometos,etc according to your taste. Also you can garnish with grated coconut if you want.

Batata Wafers (Potato Chips- Home Made)
In Maharashtra, In summer season house-wives are busy making different types of snacks which can be used for whole year. These are home made snacks which tastes delicious. I like these snacks more than the ready made "kurkure" kind of stuff as these are free of preservatives. One of these snack are "Batata Wafers" (Potato Chips - Indian style)
Ingredients:
2Kg Potatoes
Salt
Water
Recipe:
Peel all potatoes and make chips. Put the chips in a big pot, and add 2 mugs of water and little salt.
Let the chips boiled till they are half cooked.
Remove water and spread these chips on plastic paper in the hot sunlight for 4-5 hours, and let them dry totally ..
Now your chips are ready ..You just need to fry them in oil and eat with your evening Tea/ Coffey

Tometo 1
Chilli Powder Half T-Spoon
Peanuts
Dahi (curd) 2 T-Spoon
Recipe: Take Pohe in one plate. Cut Onion and Tometo and add in to it. Add Chilli Powder, Salt, and Peanuts, Add Dahi and stir well. Your easy to make breakfast is now ready. Serve with cut Dhaniya leaves.

Pithla Bhakri
Pithla Bhakri is another famous Maharashtrian food which is made very often in Maharashtrian families.
Ingredients:
2 cups of Gram floor(Besan)
2 chopped onions
2 small tomatoes chopped
4-6 green chopped chillis
1 teaspoon turmeric powder.(Haldi)
1 teaspoon cumin seeds.(Jeera)
1 teaspoon mustered seeds.(Mohri/sarso)
4-5 curry leaves (kadipatta).
1 teaspoon of smashed garlic (lahsoon)
1 small cup oil
5 cups of water.
Recipe: 1)Heat Oil in pan. 2)Make a lump-free mixture of besan and water. 3)Now add mustard seeds and cumin seeds. Wait till it splutter 4)Add garlic and wait till it becomes brown.5) Add green chillies, curry leaves. add the chopped onions. Fry it for 2/3 mins. 6)Now add mixture of besan in to the pan. and keep stirring after intervals for five mins. Your "Pithla" is now ready to serve.
Bhakri(Indian Bread):
Ingredients:
* 4 cups whole bajri(Pearl millet)flour
* 4 tablespoons ghee
* Salt to taste
Mix the flour with ghee and salt in wide thali and add water to make a firm dough.
Divide the dough into equal portions. Roll out each portion into a 100 mm diameter round. Now Roast each round on both sides on a tava till it becomes golden brown, put light pressure on the bhakhri after intervals for inside to cook evenly.
Pithla Bhakri is my favorite dish all the time as it is simple to make and very delicious and also healthy. You can also have pithla with rice.

Misal Pav
Misal pav is a very famous dish(snack)in Maharashtra. I have been eating it since collegelife. Hope you would like it :)
Ingredients:
2 cups sprouted moong(green gram) and Matki(brown gram). This can be easily available in market;2 onions- chopped;1 tsp ginger-garlic paste;1/2 cup sev(fried vermicelli);Coriander leaves- chopped; 1/2 tsp mohri(Rai) (small mustard seeds);1/2 tsp turmeric powder; 1 tsp red chilli powder; 1/2 tsp garam masala powder; Salt to taste;1/2 tsp coriander powder ;1/2 tsp cumin powder;Few curry leaves; 2 tbsp oil;A pinch of hing (asafoetida);Lemon cut in pieces.6-8 pav (Bread)
Heat oil into the pan. add mohri(Rai)and wait still it splutters. Then add chopped onion and fry till become yellowish in color. Add hing, and other spices. Now add Sprouted matki in to it asnd fry for 1 min.*(you can also add chopped tomato if you like.) Then add 4 cups of water and salt. then bring it to boil. Cook for 10 min. and remove from the heat.
Serve hot in a bowl with chopped onions Sev and corriender leaves on it on it.
Tarri - If you like to eat Misal typical marathi style(i.e.spicy)you van make Tarri to put on misal while eating.
Heat 1/2 cup oil for one min. and remove from heat. Now add Red chili powder int to it. Your Tarri is ready.
